Preface

While most other cereal grains can be traced back to prehistoric cultures, rye is a crop that has caught the attention of the world, not that long ago. In recorded history, rye was first grown in Germany, back in 400BC; this is not that long ago, considering wheat was being grown in Jordan as far back as 7500 BC! Rye is believed to have been originated from a class of Asian wild grass found in Iran, Armenia and Syria. The Roman philosopher and author, Pliny the Elder stated that rye was a food that wasn’t consumed until every other food item had been exhausted. Despite its ruggedness, rye slowly started gaining importance in Scandinavian and Eastern European cultures, and now, science has discovered that rye is a very nutritious cereal that can keep the body fit. More and more people are getting excited about this crop and are now looking for ways to incorporate it into their diet.
