Gnocchi are small potato dumplings made out of found in Italian cooking. They are served with many different sauces and toppings. Some of the sauces used are tomato sauce, pesto or cheese.


For a low carb version, gnocchi are sometimes made from cauliflower instead of potatoes. The cauliflower is shredded or riced before being formed into the gnocchi shape.


Gnocchi by itself is very bland to the taste, therefore it makes the perfect base to a variety of dishes, skillets and casseroles.
